Food

We like food. You find this out about the Foxes soon after getting to know us. I enjoy to cooking, and eating, Kyle loves to play with Obie while I cook and he also enjoys eating. Obie has not refused any food that we have given him yet, it seems we have passed this appreciation of food down to him. Before you become too concerned about our love of food remember that feasting is Biblical and it helps us long for the Kingdom of Yahweh to come in full. We don't have time to talk all about the Theology of food so you will either have to do your own study or take me at my word. 

In the last few months Kampala has opened two Kentucky Fried Chicken Restaurants. These are the first American chain restaurants in Uganda. Now we were just on home assignment for three and a half months and never stepped foot into a KFC, but once you are this far from your home country you start wondering how authentic the place is. 

We were a bit skeptical at first...

...but after close inspection and analysis...

...we were amazed at how good the chicken was. Obie is thinking "Dad, you have to bring me back here so I can eat my weight in french fries."

In Uganda we can't always find the ingredients to prepare some of our favorite foods. I was pretty proud of myself when I was able to make a green enchilada sauce that tasted close to if not better than some of the ones available in the US. Kyle had brought home a bottle of green jalapeño hot sauce and a jar of pickled jalapeños and asked "Could you make green enchiladas from this?" I took it as a challenge and put together these enchiladas that tasted awesome. They were made even better because we used some if the tortillas we made last weekend. 

"Hi, I am Obadiah and I like to eat."

"Listen here, this eating stuff is good and it makes you big and strong, so you should try it."

"Eating not only makes you happy, it make you cute and squishy, just the way God wants you to be."
