On Tuesday it was our friend Rhona's birthday. She has quickly become a very dear friend of mine, and really knows how to welcome us here to Uganda. Rhona has a great heart and is loved by so many around her, we are so thankful for her.
When we found out her birthday was coming up we were quick to ask her if we could celebrate her at our house and have a party. We were able to invite some of her close friends which are become our friends too. On tuesday night there were around twenty people at our place to celebrate Rhona, it was wonderful! Rhona requested Mexican food because "if we tried to make Ugandan food, it would not turn out well".
I made 48 onces of salsa, Erin made almost as much guacamole, we had rice, ground beef and chicken. Because it is hard to find tortillas here, we substituted them for chapati (a flat bread that is made everywhere in Uganda). We even fried the chapati so that we could have some chips to go with it. It all was so good, and most of our guests enjoyed the food, except for the chicken which was too spicy for some. We had just used a recipe for "Homemade Taco Seasoning" which tasted just like what you can get back in the states and to me, is pretty mild.
Friends went around the room and talked about what they loved about Rhona; her generosity, her big heart, and how she is a great mom. It was a fun time to be a part of and I could not have agreed more with what was said about Rhona.

We had a cake and sang "Happy Birthday" in spanish to keep up with the theme. That night I was instructing everyone on how to prepare a taco and then how to eat it. Well, come to find out three days after the party, someone told us that in Luganda "taco" means butt/bottom/rear end. So it makes more sense to us now why so many were laughing when we were giving instructions about the food. We basically said "Tonight we are having butt!" and "Here is how to fix a good butt!" Pretty hilarious.
