Thanksgiving

This year we got to celebrate Thanksgiving on Friday because it worked best for all of our schedules.  
Kyle and Trey went to pick up our live turkey from a guy on the side of the road on Tuesday and then we had a friend butcher it for us. On Thursday, Erin and I spent most of the day preparing for the meal and we kept thinking how much more work it would be if we were not together.  Since there is no pumpkin puree to be found here we had make our own and four pumpkins makes a bunch of puree!  


We ended up making three pumpkin pies and had enough puree to make three more. We also made two chocolate cream pies with Oreo crusts.  Because the two of us pregnant women wanted to lighten our load for cooking on Friday we attempted to do as much as we could the day before. We made dough for dinner rolls and corn bread for a stuffing recipe that called for that as well as french bread. The turkey was set in its brine and all was ready for the big day. Kyle and Trey even cleaned up all the dishes and mess we made. 
I think that in my zeal for beginning to feel better I may have overdone it and as a result, spent most of my day today near the restroom. Erin, Trey and Kyle did all of the cooking today even though I tried to help out with a few things. By the time our guests came I was well enough to join them, even though I wan't able to eat very much. 

We invited a few of our close friends over to celebrate the holiday with us. We served mashed potatoes, gravy, corn, stuffing, rolls, a green salad and of course, turkey.  I think they enjoyed the food as much as we did, even though some of the way we prepared thing was different than they are used to. 



I kinda dropped the ball in getting pictures of the amazing food we worked so hard on and in getting pictures of our guests...sorry about that! 
In our excitement we overlooked a small detail. Almost all of our guests still had to work that day so they took their "lunch breaks" with us to eat but leave after a bit to get back to work. It was one of the shortest Thanksgiving celebrations I have had. There is a great deal of pie left that we will be gladly enjoying of the next few days.
